The form: the final い of an い-adjective drops, and かった takes its place: たのしい → たのしかったです. The negative is くなかったです: おもしろくなかったです.
The main point: English puts the past on “was”, but です here only adds politeness. It doesn't change in the past and never becomes でした. The adjective itself carries the past: たのしかったです is right, たのしいでした is wrong.
There is one exception, and it's a common one: いい → よかったです, よくなかったです. There is no form いかったです.
To ask how something was, say どうでしたか (“How was it?”). The answer is one word in the past: たのしかったです.
